Today I am going to show you how to make Turkish chicken kebabs with tzatziki sauce step-by-step. Chicken kebabs are one of the famous Turkish foods (Tavuk Siş). There are many recipes for the chicken kebab with tzatziki out there, you may not know where to turn, most of them are different from each other based on what kind of spices and herbs were used. Chicken kebabs are certainly a restaurant level food, you may find it in Greek and Turkish cousins menus. Let us start making some restaurant quality chicken kebabs with our way!. usually served with tzatziki, hummus and/or Tabouleh.

Serving: around 12-15 kebabs

Ingredients:

  1. Two pounds of boneless chicken breasts cut into around one-inch cubes.
  2. Five tablespoons extra virgin olive oil, you need more later
  3. Two tablespoons freshly squeezed lemon juice
  4. One tablespoon balsamic vinegar
  5. Two minced cloves of garlic
  6. Two teaspoons oregano
  7. One-half teaspoon ground coriander
  8. One-half teaspoon dried thyme
  9. One-half dried basil
  10. Pinch of salt
  11. Pinch of ground black pepper
  12. Four mid-size red bell pepper cut into around one-inch cubes
  13. One large red onion chopped into around one-inch cubes
  14. Around one pound baby zucchini, cut into thick slices (0.5-inch thick)
  15. Around 12-15 skewers, if you use wooden skewers soak them in water for 30 minutes.

Tzatziki Ingredients:

  1. Two mid-size cucumbers, peeled and seeded, then chopped into small pieces
  2. One teaspoon pink salt, you may need more for the taste later
  3. Around 20 oz of Greek yogurt
  4. One minced clove of garlic
  5. Two tablespoons freshly squeezed lemon juice
  6. Two tablespoons of Italian parsley chopped
  7. Two tablespoons dill chopped.

Preparation:

  • In a large bowl mix the olive oil, lemon juice, balsamic vinegar, minced garlic, basil, oregano, coriander, thyme, ground black pepper, and salt (check the taste here if you need more salt).
  • Put the chicken breast pieces in one-gallon Ziploc plastic bag ( I personally do not like to use plastic, so my healthy, eco-friendly alternative will be an air tight glass jar).
  • Pour the olive oil and herbs mixture over the chicken pieces and marinade in air tight plastic or glass sealable utensil.
  • Put the mixture in the fridge for one to two hours maximum.
  • Brush the veggies cubes (red pepper, onion, and zucchini) with extra virgin olive oil, then sprinkle salt and pinch of ground black pepper.
  • Thread the veggies one piece of each, then two or three pieces marinated chicken. You can arrange the veggies and chicken in any configuration you would like here.
  • Preheat the grill to high temperature (you can use your oven too, however, the grill is better for kebabs, just my experience!)
  • To prevent the skewers from stick on the grill, spray the grill with olive oil. Place your skewers and grill for around ten minutes, you need to be careful not to over grilled, keep rotating side by side.
  • Optional: decorate with Italian parsley

Tzatziki:

  • In a strainer transfer cucumber pieces then add the salt and toss.
  • Squeeze the cucumber and transfer to a blender, then start blend with pulses. drain any liquid
  • In a small bowl, add the blended cucumber, Greek yogurt, garlic, lemon juice, parsley, and dill and season with salt and pepper to taste. Mix them together very well.
  • Transfer to a clean, dry and air tight container and keep them in the fridge.
